Indiana State Confirmed Two Cases Of Botulism
Cases Of Botulism
Indiana State health officials confirmed two cases of botulism in Indiana linked to Castleberry's Hot Dog Chili Sauce.
An Indiana couple who ate the products became seriously ill and were hospitalized. Two other botulism cases in Texas were also linked to the chili sauce.
Botulism is a muscle-paralyzing disease caused by a toxin made by the bacterium, C lostridium botulinum . The toxin was identified in leftover chili collected from the Indiana couple's refrigerator. Confidentiality laws prohibit the release of the victims' personal information.
"The manufacturer is recalling 10 ounce cans of Castleberry's, Austex, and Kroger brands of hot dog chili sauce with "best by" dates from April 30, 2009 through May 22, 2009," said Lynae Granzow, enteric epidemiologist at the State Department of Health. "People who have any of these products or any food made with these products should throw them away immediately."
The toxin is so potent that any exposure to it could cause botulism. People can become sick if the toxin gets on their hands or their face, so Granzow recommends that consumers do not even open the cans.
Signs of botulism in canned foods include bulging lids, foam, or a bad odor. Not all cans will bulge if contaminated with botulism.
"It's important to heat all canned foods to boiling for at least five minutes prior to eating," said Granzow. "This can destroy the botulinum toxin. Also, proper cooling and storage of all foods prepared at home is important in preventing botulism."
Symptoms of botulism include double or blurred vision, drooping eyelids, slurred speech, difficulty swallowing, dry mouth, and muscle weakness that moves down the body. Eventually, paralysis can lead to death. Most victims typically recover after weeks to months of care.
