This is a fabulous, no fail, sugar-free vegan ice cream recipe with coconut milk. You don't even need an ice cream maker to make it. The sweet, dreamy blend of cream, orange and vanilla are reminiscent of a creamsicle.

This vegan ice cream with coconut milk is rich and satisfying with some amazing nutritious ingredients. It's great for an everyday dessert and it's also very rich and certainly delectable enough to serve to guests at a dinner party, perhaps with an elegant chocolate wafer or a crispy waffle cookie placed inside the dish.

You need just four amazing ingredients: coconut milk, orange juice concentrate, stevia and vanilla.

Not only can you feel guilt-free serving this dessert, you can actually be proud, knowing that this feeds the body what it needs and craves.

Note that you will need some prep time. You'll need to first place your can of coconut milk into the fridge overnight before you make the ice cream, and then once mixed, it will also be about 6 to 8 hours freezing time.

Also, check your coconut milk labels. Some coconut milk actually contains sugar. You don't need that for this recipe, although if that is what you have on hand, it will also work in this recipe.

Recipe for Orange Creamsicle Vegan Ice Cream With Coconut Milk

1 13 or 14 Ounce Can of coconut milk
1/2 can of frozen orange juice concentrate (frozen)
4 or 5 packs of stevia (or 4-5 tsp sugar)
2 tsp vanilla

Remove your coconut milk from the fridge and open. The thicker, fattier part of the milk will have risen to the top of the can. Do not stir. Carefully remove about one half of the separated coconut milk from the can and place in a small stainless steel bowl. Beat on high with mixer for about 3 minutes.

In another bowl, remove half of the can of the orange juice concentrate, and again, mix on high for about 2 minutes.
Into the orange mixture, add stevia and blend well.

Add the orange mix to the fluffy coconut milk mix and mix until it's all stirred together. Place it in a container and freeze for 6-8 hours until frozen.
