Even if you have heard it all before about cooking oils being carcinogenic, perhaps you have not come across scientific evidence of this fact. The Independent.co.uk reported that corn, sunflower, palm and soya bean oils - often called "vegetable" oils are indeed not a good healthy choice, because “a meal fried in vegetable oil such as fish and chips contains 100 to 200 times more aldehydes than the daily limit set by the World Health Organisation (WHO).”
But, what are the studies to help us know why ditching carcinogenic vegetable oil is the way to go?
The reason why cooking vegetables oil is bad is because scientists found that heating up vegetable oils led to the release of high concentrations of chemicals called aldehydes, which have been linked to illnesses including cancer, heart disease and dementia.
More recently, a review on various studies on the impact of consumption of repeatedly heated cooking oils (RCO) on the incidence of various cancers, concluded that these repeatedly heated cooking oils consumption and inhalation of cooking fumes can pose a serious health hazard. RCO and its cooking fumes were found to enhance the incidence of aberrant cells, including breaks, fragments, exchanges and multiple chromosomal damages and micronuclei in a dose-dependent manner. Furthermore, the large consumption of RCO has been associated with a number of malignancies, including lung, colorectal, breast, and prostate cancers.
A study that confirms that, there is a link between aldehyde levels in the blood and cancer was conducted. Researchers analyzed the concentrations of 22 known aldehydes (byproducts of lipid peroxidation), 5 acyloins, free and total carnitine and acylcarnitines were measured in plasma and urine obtained from pediatric patients with various forms of cancer before any treatment. The results showed that Aldehydes, before the initiation of chemotherapy, were significantly elevated in cancer patients compared to controls. In addition, in each form of cancer the pattern of aldehydes appeared to be unique when compared to controls, or to others forms of cancer.
In an experimental research, scientists tried to find the evidence that volatile substances, like aldehydes, in human breath can reflect presence of neoplasma ( cancer). In this study, volatile aldehydes were determined in exhaled breath of 12 lung cancer patients, 12 smokers and 12 healthy volunteers. They observed that exhaled the aldehydes: pentanal, hexanal, octanal and nonanal concentrations were significantly higher in lung cancer patients than in smokers and healthy controls. In addition to that, Lung cancer patients could be identified by means of exhaled pentanal, hexanal, octanal and nonanal concentrations.

The best alternative to vegetable oil is coconut oil, because it has a high smoking point, which is important for deep - frying and pan frying. Also, it has been reported that proper oil temperature ensures a healthier fried food. While all fried foods will absorb oil, the right temperature will prevent burning, reduce the amount of oil absorbed and better preserve nutrients. In addition to that Coconut oil is rich in medium-chain triglycerides, which are made up of healthy fatty acids. These fatty acids are mostly lost during the refining process, but they are present in unrefined coconut oil. It is important to note that refined coconut oil has a smoke point of 400 degrees Fahrenheit, unrefined coconut oil only has a smoke point of 350 degrees.
