Typical overnight oat recipes include dairy, but if you’re vegan you don’t have to miss out on the fun. Simply make a few non-dairy swaps, add some highly nourishing healing foods and you’ve got jacked up vegan nutrition on the go!

In a ½ pint mason jar with a lid combine the following ingredients:

  1. 1/4 cup organic oats, 1/2 cup coconut milk, 1/2 tablespoon coconut or cashew yogurt, ½ tsp chia seeds, and 1 tablespoon maple syrup. Cover and shake until combined.
  2. Remove lid and fold in frozen wild blueberries.
  3. Cover jar with lid.
  4. Refrigerate oats for 8 hours to overnight.
  5. In the morning top with gluten-free hemp granola, and more maple syrup if desired. Enjoy.

Feel free to adjust the amount of liquid to get the consistency you desire.
