Researchers studied the effects of beans on postprandial metabolic, oxidative stress, and inflammatory responses with the focus of understanding the contribution of two specific properties: fiber and antioxidant capacity on biological responses in adults with Metabolic syndrome. The research published in the journal Nutrients found that including black beans with a typical Western-style meal not only increases the content of lean plant-based protein and dietary fiber, it adds an impressive amount of micronutrient and phytochemical components with high amounts of antioxidants.
Black Beans Are The Highest In Antioxidants
Other research has shown that the dark coating on the black bean holds powerful flavonoids. These are delphinidin, petunidin, and malvidin, which are substances that are potent in antioxidant activity.
For this study, twenty-nine common bean genotypes were selected. Pot experiments were carried out at the greenhouse of the Mayville State University, ND, USA during the summer of 2008 in order to investigate the profile of anthocyanin, polyphenol and antioxidant activity. Generally bean genotypes with high anthocyanin and polyphenol content exhibited high antioxidant activity. Results showed the black beans contained the highest anthocyanin content.
