1 lb gluten-free elbow macaroni pasta
2 cups of unsweetened dairy-free milk (rice milk, almond milk or other type)
1 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon onion powder
3 tablespoons cornstarch or tapioca starch
3 cups gluten-free and dairy-free cheese (Daiya cheese or other type)

Easy mac and cheese recipe instructions

1. Cook gluten-free pasta in a pot on the stove by following package instructions. Drain water after cooking.
2. In a different pot, add the dairy-free milk, cheese, salt, pepper, onion powder and cornstarch or tapioca starch. Cook until cheese is melted. Stir.
3. Add the gluten-free pasta to the pot. Stir.
4. Cook until pasta is covered in the cheese mixture by simmering on low heat.
5. Let it cool and serve.

Tips for making your own mac and cheese

This recipe can be modified with extra herbs or spices if you prefer to have them in your mac and cheese. Paprika, mustard, turmeric and chili powder are popular options. In addition, you do not have to use Daiya GF and DF cheese. If there is a different brand of gluten-free and dairy-free cheese that your family prefers, then you can substitute it. However, it is easier to make the sauce by using shredded cheese than whole slices because it melts faster. You can also bake the mac and cheese in an oven to make it crunchy and crispy.
