The American Heart Association reports that research on rats has shown that cinnamon may decrease damage of a high-fat diet. According to this study the risk of cardiovascular damage from a high- fat diet may be decreased by cinnamon via activation of the body’s antioxidant and anti-inflammatory systems and slowing down of the process of fat storing.

For this study rats were fed cinnamon supplements for 12 weeks with a high-fat diet. In comparison to the rats that were not fed cinnamon along with their high-fat foods, the rats which were fed cinnamon with a high-fat diet did not weigh as much, did not have as much belly fat, and had blood levels of sugar, insulin and fat which were healthier. It is suggested by these findings that cinnamon may lower the negative effects of a high-fat diet.

It has been suggested that combining cinnamon with honey is a good way to fight off disease. Cinnamon has such powerful health promoting effects it may also benefit the treatment of Parkinson's Disease.

This appears to be because cinnamon contains coumarin, which is a naturally occurring flavoring substance, which has been associated with liver damage.
