Weekend Keto Cookout with Bacon-Rubbed BBQ Chicken Skewers
You may already have a good Keto recipe for a weekend cooking as the weather is getting nice outside. This bacon-rubbed BBQ Chicken recipe may not be fast, but is easy.

Now that you know how to make your own Bacon BBQ Sauce, which is found on page 30 of the Quick Keto Meals in 30 Minutes of Less book, why not put it to good use in a batch of fun-to-eat chicken skewers? For best results, let the meat marinate overnight, or for up to 24 hours, before cooking. The following combination makes 4 servings. The hands-on time is 10 minutes, but the overall cooking time is 25 minutes, plus the time of marinating.
1.3 pounds (600 g) boneless and skinless chicken thighs
½ cup (120 g/4.2 oz) Bacon BBQ Sauce (page 30)
2 tablespoons (30 ml/1 oz) extra-virgin olive oil
GRILLED ZUCCHINI SALAD:
- 2 medium (400 g/14.1 oz) zucchini, chopped
- 2 bunches (300 g/10.6) asparagus
- 2 medium (30 g/1.1 oz) spring onions, sliced
- 2 tablespoons (8 g/0.2 oz) chopped fresh mint or parsley, divided
- 1 tablespoon (15 ml/0.5 oz) fresh lemon juice
- 2 tablespoons (30 g/1.1 oz) ghee or butter, melted
- Salt and pepper
- 2 tablespoons (30 ml/1 oz) extra-virgin olive oil
To make the chicken, cut the thighs into medium pieces (1 to 11/2 inches/3 to 4 cm). Place them in a bowl, and add the Bacon BBQ Sauce and olive oil. Stir to combine. Cover with plastic wrap and refrigerate for 1 to 2 hours (or for up to 24 hours).
When the meat is ready, preheat the broiler to 450°F (230°C, or gas mark 8). Thread the chicken pieces onto skewers and place on a wire rack set inside a baking tray.
To make the zucchini salad, place the zucchini in another baking tray. Add the asparagus, spring onions, and chopped mint. (Reserve some mint for garnish.) Drizzle the vegetables with the lemon juice and melted ghee, and season with salt and pepper.
Place both the chicken skewers and the vegetables in the oven and cook for 12 to 15 minutes. Remove from the oven and let cool for 5 minutes before serving. Garnish the vegetables and skewers with the reserved mint and drizzle with the olive oil.
