Steamed Broccoli with Lemon Sauce

Broccoli Recipe

This broccoli recipe yields 4 servings and the start to finish time takes 20 minutes.

  • 0.5 cup low-sodium chicken broth

  • 2 tablespoons lemon juice

  • 2 teaspoons cornstarch

  • 0.5 teaspoon low-sodium soy sauce

  • 0.25 teaspoon xylitol

  • 1 teaspoon butter

  • 3 cups broccoli florets

In a small saucepan over medium-low heat, combine the chicken broth, lemon juice, cornstarch, soy sauce, and xylitol. Stir until the cornstarch is dissolved. Increase the heat to medium and bring to a boil, stirring constantly. Reduce the heat to low and cook for another 3 to 5 minutes, stirring constantly, or until the sauce is thick. Add the butter. Keep warm.

Steam the broccoli over boiling water for 5 to 7 minutes, or until just tender. (Or place in a covered glass dish with 2 tablespoons of water and cook in the microwave for 2 to 3 minutes.) Drain the broccoli and serve with lemon sauce.

Per serving: calories 67, protein 4g, carbohydrates 10g, fiber 4g, fat 2g (monounsaturated 1g, polyunsaturated trace, saturated 1g), sodium 84mg.
